Ingredients
2 large eggs
1 1/2 cup buttermilk
1 stick butter, melted and cooled
1 tsp vanilla extract
1/2 cup pumpkin puree
1 3/4 cups all-purpose flour
2 tsp pumpkin pie spice
3 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
Serve with freshly whipped cream, pecans, and buttermilk syrup
Directions:
1. Preheat waffle iron
2. Mix egg, buttermilk, butter, vanilla, and pumpkin puree until combined.
3. In a separate bowl, combine all the dry ingredients, flour, pumpkin pie spice, sugar, baking powder, baking soda, and salt.
4. Add the dry ingredient to the wet ingredients, mix just until combined.
