These are Megan kind of recipes (no measurements sorry)...they seriously were just too good to not share. TRY THEM!
Tomato Pesto Grilled Cheese
- Rosemary Parmesan bread (I got this at Costco and am obsessed with it, it's delicious, particularly for grilled cheese)
- Tomato
- Cheese (I used Gouda once and the coastal white cheddar from Costco another time)
- Pecan Pesto*
- optional Spinach or Arugula
Apricot Grilled Cheese (aka Heaven in a Sandwich)
- Rosemary Parmesan bread
- Cheese (I've used brie once and the coastal white cheddar from Costco another time)
- Apricot preserves
- optional Dijon mustard
*Pecan Pesto
- Basil (maybe a cup)
- 1-2 garlic cloves
- Squeeze of lemon or lemon zest
- Pecans (1/4-1/2 cup)
- Parmesan Cheese
- Olive oil until it looks the right consistancy
- Salt and Pepper to taste
