Butternut Squash Ravioli with Shallot Sage Cream Sauce

These pretty little ravioli's are from Costco.  They're pretty AND they taste good!  I had a dish like this at Claim Jumper and have been craving it again ever since.  I found a sauce on line that sounded similar and tweaked it a little.

(This makes enough sauce for the two packages from Costco)

1 T. olive oil
1 T. butter
2 shallots, chopped
1 c. chicken stock
2 c. heavy cream (or use what you've got on hand...I used half & half)
1/2 t. nutmeg
2 pinches of salt
1/2 t. pepper
2 T. fresh sage leaves, chopped

Heat oil and butter in skillet.  Add shallots and saute.  Add the chicken stock and let it simmer for 5 minutes or so.  Add cream, nutmeg, salt, pepper, and sage and let simmer until it thickens.  (Mine wasn't thickening so I added a little cornstarch and let it cook for a while.  You could add flour too...just let it simmer for a while so the flavor cooks out).
