Gingerbread Pancakes with Warm Cinnamon Applesauce and Maple Whipped Cream
Pancakes
1 T. cinnamon
1 T. ginger
2 c. pancake mix
2 1/2 c. buttermilk
1/2 c. molasses
Mix dry ingredients. Mix buttermilk and molasses. Combine and make your pancakes!
Cinnamon Applesauce
2 golden delicious apples
3 c. applesauce
1/4 c. water
1/4 c. sugar
3 T. red hots
Peel and dice apples. Add apples and remaining ingredients to a saucepan. Heat over low-medium heat until it thickens (simmer about 15-20 minutes).
Maple Whipped Cream
1 1/2 c. heavy cream
1/2 c. maple syrup
Whip them together until desired thickness. (I will probably half this next time. I always have lots leftover.)
