I got this recipe from Abby McCoy. It makes a lot! I did it in the instant pot (just left the beans out and added them at the end). I would probably half this for my family next time (my kids weren't huge fans).
1.5-2 lbs. ground turkey
1 yellow onion, diced
2 c. uncooked quinoa
3-10 oz. can mild red enchilada sauce (I used green)
2 cans black beans
2 cans fire roasted tomatoes in juice
2 cans corn
1 red pepper, diced
1 green pepper, diced
2.5 T. chili powder
1.5 T. cumin
1.5 t. garlic powder
Dump it all in crock pot. Cook on low 5 hours or high 2-3 hours. Serve with avocados, cilantro, cheese, sour cream, etc.
