I finally made a recipe for dinner group tonight and remembered the measurements I used...so here goes, get ready to be amazed at my ability to use measurements. This recipe is about 10 servings by the way, it makes a lot.
5 green or red peppers
1 1/2 lbs ground beef
1 1/2 cups brown riced (before it's cooked)
1/2 yellow onion
2 cans black beans, drained
1 can crushed tomatoes
1 small can of tomato paste
about 2 cups pepperjack cheese
1/2 teaspoon salt
1 teaspoon chipotle powder (could substitute chili powder)
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon onion powder

Cook brown rice according to package directions (could also use white), set a side. Cook onion and ground beef in large pan until ground beef is browned. Drain fat. Add beans, tomatoes, tomato paste, and seasonings to the meat. Simmer for about 15 or so minutes. Add rice and about a cup of cheese. (taste and add any more seasonings it may need!)
Cut bell peppers in half and remove seeds and veins. Put in boiling water and allow to boil for about 5 minutes.
Stuff peppers until they are heaping with gooey goodness. Then top with cheese.
Bake at 375 degrees for about 20 minutes (or until cheese is delicious looking). Garnish with cilantro.
I'm probably really bad at giving directions, sorry. These took a while to make but were easy and very healthy. I made them with my favorite cornbread muffins.
