Whole-Wheat Banana Pancakes

Pancakes are Zander's favorite breakfast...we all love them actually.  He asks for them multiple times a week, though, so I'm always looking for variations.  Here's a fun, yummy one I found this morning looking to use up brown bananas.  (I wasn't actually able to taste them, because I'm still on the cleanse.  The boys ate them up, though.  I'll try them sometime and alter the recipe if needed:) )

2 medium bananas
2 eggs
2 c. milk (I did part buttermilk)
2 c. whole wheat flour
2 t. baking powder
1/2 t. salt

Mash the bananas in a large bowl. Whisk in the egg and milk. Beat the mixture until the banana is as smooth as you can reasonably get it. Measure in the flour, baking powder, and salt. Whisk again until the batter is smooth. Drop by 1/4-cupfuls onto an oiled skillet or griddle. Cook until brown underneath and dry on top with tiny bubbles. Flip to brown the second side. Repeat with remaining batter. Serve hot with syrup or applesauce. (Zackery ate peanut butter and syrup on his)


Makes 12-16 pancakes
