Chicken with Orzo

Chicken with Orzo

1 1/2 c. orzo pasta (8 oz.)
2 c. shredded fresh spinach leaves
1/2 c. crumbled feta cheese (2 oz.)
1 t. finely shredded lemon peel
1 hot rotisserie chicken, cut into serving-size pieces
1 medium tomato, cut in wedges

Spray a 2-quart rectangular baking dish with nonstick coating; set aside.  Prepare orzo according to package directions.  Drain well.  Return orzo to saucepan.

Add spinach, half of the feta cheese, and lemon peel, tossing to mix.  Spread orzo mixture in the prepared baking dish.  Arrange chicken pieces and tomato wedges atop.  Sprinkle with the remaining feta cheese.  Bake, uncovered, in a 450 degree of about 10 minutes or till heated through.  Makes 4-6 servings.
