Corn Bread

This is my go-to corn bread recipe. I've made it with both white flour and whole wheat and it turns out great either way!

2 eggs
1 cup sugar (I usually only add 1/2-3/4 cup)
2 cups buttermilk
2 cups flour
1 cup cornmeal
1/2 cup oil (can add 1/2 cup applesauce to make it extra moist)
2 tsp. baking soda
1 tsp. salt

Preheat oven to 400 degrees. Mix together eggs, sugar, and buttermilk. Add the rest of the ingredients, don't over mix. Pour in a greased 9 x 13 pan and bake for 20 minutes. (It takes about 22 minutes in my oven).

And this Honey Butter recipe with this is to die for! 

2 sticks butter, softened
1/2 cup honey
1/2 cup marshmallow fluff
