One of mom's recipes...a quick easy dinner where you probably have everything on hand.
1 1/2 lb. ground beef
1/2 c. uncooked rice
1 t. salt
1/2 t. pepper
1 T. minced onion
(I like a little garlic powder)
1 can tomato soup
1 can water
Combine ground beef, rice, and seasonings well. (Use your hands...it's the only way). Form into 1-2" meatballs. Place in a big skillet. Pour tomato soup and water over meatballs. Bring liquid to a boil. Turn heat down, cover with a tight fitting lid, and simmer for 20-30 minutes until rice is cooked.
I made these last night and served with a green salad and "Our Best Bites" yummy Sweet Chile Cheese Cornbread.
