Feta Sun-Dried Tomato Turkey Burger Sliders
(I got this yummy recipe from www.picky-palate.com. I've made it twice and love 'em! You could do regular size burgers too. One more note: you can find the mini buns at Trader Joes, but they're yummy on Ciabatta Rolls too!)
2 T. extra virgin olive oil
1 lb. ground turkey
1/2 c. crumbled feta cheese
1/4 c. sun-dried tomatoes, jarred in olive oil, chopped
1/2 c. fresh baby spinach leaves, chopped
pinch of salt, pepper, and Lawry's Garlic Salt with Parsley (I didn't have that, so I just used garlic powder and parsley)
1. Heat oil into a large skillet over medium heat. Place turkey, feta, sun-dried tomato, spinach and seasonings into a mixing bowl. Mix until just combined. Form 1/4 c. little patties and place onto a cookie sheet. Once all formed, place batches in hot skillet. Cook for 3-4 minutes per side or until golden brown and cooked through.
Sun-Dried Tomato Mayonnaise
(I made it the first time, but didn't bother the next time).
1 c. mayo
2 T. sun-dried tomatoes, chopped
Mix mayo and tomatoes to combine. Spread over insides of baby hamburger buns. Layer bottom roll with spinach leaves and the burger.
Makes about 12 little sliders.
